We make this wine with indigenous yeast and malolactic cultures to showcase the identity of the wine through the unique place and time of the fruit’s growth.
It begins beautifully with minerals, black cherry, and a slightly earthy tomato leaf note (like a tomato plant on a hot summer day near an herb garden with fennel plants going to seed). The texture of the wine is elegant and focused on the attention-grabbing-pop of ripe blackberry and plum with a lingering floral finish.
