75% Corvina, 20% Rondinella & 5% Molinara. The “Il Bosco” vineyard is located in Negrar, the very heart of the Amarone and Valpolicella D.O.C. zones. This prized site is only 4 hectares (10 acres) in size. Through a careful selection of fruit, Franco Cesari sets aside the very best grapes in the hope of producing about 10,000 bottles of outstanding Il Bosco vintages. The grapes are patiently dried until mid-January. Fermentation takes place slowly in stainless steel at low temperatures for 3 or 4 months. After malolactic fermentation, the wine is transferred under a blanket of Nitrogen to large Slovenian casks where it rests for two years. This is followed by at least 18 months of bottle aging.

The Cesari winery was founded in 1936 by Gerardo Cesari, who began with forty hectares of vineyards within the province of Verona. In the early 1960’s, Gerardo’s son, Franco, took control of the family business. Franco expanded the winery operation and began to explore the export market. Today, Cesari wines are exported worldwide. As the demand continued to grow Franco expanded his holdings, acquiring an impressive collection of vineyards throughout the Veneto. Their production now includes excellent single vineyard Amarone as well as an array of innovative and traditional Veronese selections. The future of the winery has also been secured as Franco's children, Deborah and Gerardo, work diligently in marketing and sales. Their efforts ensure that the business with thrive for generations to come.
