Named for the winery’s matriarch, Mara Cesari, this wine is produced in the extended Valpolicella region near the city of Verona in the Veneto region. Following fermentation in stainless steel, the wine was refermented on the dried grape skins (“the Ripasso technique”). The wine is then racked off for a few months and undergoes malolactic fermentation. Aging takes place for 12 months in Slavonian oak barrels and French tonneaux and 6 months in bottle. A smooth, elegant wine with an aromatic bouquet of ripe fruit and cherries, Cesari Mara Valpolicella Superiore Ripasso boasts a persistent, warm finish. Enjoy this wine with game and grilled meats.
