Hiedler farms ecologically with very little use of sprays. He is gradually moving towards organic. Everything is done Mother Nature's way using only natural yeast & hand harvesting & sorting. Gentleness in the entire winemaking process. The winery's goal is always to produce good texture & good extraction to give the wine lots of personality. This is a family estate. Maria and Ludwig work 16 hectares of vines, producing on average 8,300 cases of wines, almost half of it Grüner Veltliner. The harvest at Hiedler is performed by hand, in several passes to select only optimally-ripe and undamaged fruit. Fermentation is temperature-controlled, and the wine is aged partly in stainless steel and partly in acacia casks.
