Fermentation takes place in stainless steel tanks at a controlled temparature of 28C. At the end of fermantation, maceration follows immediately for a period of 15 to 18 days at a temperature of around 25C. Malolatic fermentation take place in wood where the wine ìs also aged.
The wines are aged for 10 months in barriques and then 3 months in bottle.
